Chia Fruit Squares

These squidgy fruit squares can set you up for the day at breakfast, or make a tasty midday snack.

Preparation Time: 30 minutes
Cooking Time: 30 minutes
Serves: 16

Ingredients
90 g porridge oats
75 g chia seeds
75 g margarine
3 tbsp agave syrup
2 tbsp sunflower seeds
2 tbsp pumpkin seeds
2 tbsp desiccated coconut
1 tbsp pine nuts
2 bananas
2 apples
400 ml boiling water

Method
  • Soak the chia seeds in boiling water for 15 minutes, or until the water has been completely absorbed.

  • Melt the margarine in a saucepan, along with the agave syrup.
  • Pre-heat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/325& #3872 ;F/5 Gas.
  • Slice the apples, and stir in.

  • Mash the bananas, and stir in.

  • Mix together the oats, seeds, nuts, and coconut, and then stir into the mixture.
  • Stir in the chia seeds, and press the mixture into a square baking tray.

  • Bake for half an hour.
  • Slice into 16 squares.
