Chic pea and spring vegetable salad
Colourful, easy and delicious.
If you have run out of salad ideas, why not raid your pantry and your garden and put these few simple and healthy ingredients together.

This salad is so quick and easy to make, not to mention delicious to eat. I used some chic peas from the pantry and some fresh ingredients from the garden and I came up with a salad that was crispy, healthy and so appetizing to eat. You can serve it up as a side dish to your dinner, lunch with left over meats or tuna, or simply as a wrap filling. It will keep in the fridge for days and it is something that you will make again and again.
There is nothing like fresh ingredients and this salad brings everything together and is the perfect last minute salad you can whip up for your dinner guests!
Ingredients
2 cans of chic peas
3 Dutch carrots
1 or 2 Roma tomatoes
2 or 3 small spring onions
A handful of coriander
3 Tablespoons of extra virgin olive oil
2 Tablespoons of Balsamic vinegar
Salt and pepper to taste
Method
Pick some seasonal vegetables from the garden. I managed to find carrots, one Roma tomato, spring onions and coriander.
Drain the chic peas and place in a bowl.
Dice the carrots, tomato, spring onions and coriander.
Put your fresh ingredients with the chic peas.
Add the extra virgin olive oil and balsamic vinegar.
Add salt and pepper to taste and stir together.
