Chicken & Garlic Shoot Stir-Fry

Garlic Shoots, also known as garlic scapes, are the curly tipped, extremely tasty green shoots that grow from garlic. They are garlicky but with a fresh green taste. They are juicy and sweet and have a crunch when you bite. I love the combination of them with chicken.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 6 servings

3 chicken breast fillets, cut into bite-size pieces
2 bunches garlic shoots, cut into matchsticks
3 cloves garlic, roughly chopped

For Marinade
3 tablespoons oyster sauce
2 tablespoons soy sauce
1 tablespoon sesame oil
a pinch of salt
3 dashes of white pepper powder

steamed jasmine rice, to serve
garlic chilli sauce, to serve


Marinate the chicken with the oyster sauce, soy sauce, sesame oil, salt and white pepper powder.

Heat 2 tablespoons of vegetable oil in a large saucepan. Add in the chopped garlic and fry until fragrant.

Add in the garlic shoots, do a quick few stirs until they are coated in oil and garlic. Cover and leave it to cook in the steam for 5 minutes.

Uncover. Move the garlic shoots to the sides of the pan.

Add in the chicken pieces and cook for 5 minutes.

Mix the chicken with the garlic shoots.

Pour in 1/2 cup of water. Cover and bring to the boil. Turn the heat down and simmer for 5 minutes.

Serve with steamed jasmine rice and garlic chilli sauce.
