Chicken and Apricot Filo Pie

This is an absolutely delicious recipe and has quite an unusual taste.

Mixing blanched almonds with chicken and dried apricots, it can be eaten either hot or cold with crispy filo pastry.

I HAD intended to use minced chicken, however, had it in my freezer and when I defrosted it, it was pieces, which I then cut very small.

Preparation Time: 25 minutes
Cooking Time: 40 minutes
Serves: 3 - 4

Ingredients
75 g bulghur wheat
45 g butter
½ onion, chopped
375 g minced chicken
40 g chopped dried apricots
25 g blanched almonds
1 tsp cinnamon
½ tsp ground allspice
45 ml Greek yogurt
1 tbsp chives, chopped
2 tbsp parsley, chopped
6 sheets filo pastry
Fresh chives, to garnish

Method
  • Preheat the oven to 200°/180 ° fan forced.

  • Put the bulgur wheat in a bowl with about ½ cup boiling water. Leave it to soak for 5 to 10 minutes or until the water is absorbed.

  • Heat 1 tbsp of the butter and add the onion. Cook for a minute or two and add the chicken and gently cook, stirring occasionally until it it done (about 10 minutes)


  • Stir in the apricots, almonds and bulgur wheat and cook for a further two minutes.


  • Remove from the heat and add in the cinnamon and allspice, yogurt, chopped chives and chopped parsley.

  • Season to taste with salt and pepper.

  • Melt the remaining butter.

  • Unroll the filo pastry and cut or tear into about 25 cm rounds. Keep the pastry covered with a damp towel while working on this to prevent them drying out.

  • Line a 23 cm loose based flan tin or quiche pan with three of the pastry rounds. Brush each one lightly with the melted butter as you layer them.


  • Spoon in the chicken mixture and cover with three more pastry rounds, also lightly brushed with melted butter.


  • Crumple the rest of the pastry and put on top of the pie.


  • Brush over any remaining melted butter, and bake in the oven for about 25 minutes or until the pastry is golden brown and crisp.


  • Serve hot or cold, cut into wedges, and garnished with the chives.

  • I served this with microwaved broccolini.
