Chicken And Broccoli Stir Fry

This delicious chicken and broccoli stir fry is a regular in our house. It's great as is, but if you prefer your stir frys with a bit of zing, you could add some chillis or chilli sauce to yours.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Serves: 4

Ingredients
500 g chicken fillets (thigh or breast), sliced thinly
500 g broccoli, cut into florets
1 onion, sliced thinly
2 carrots, sliced thinly
1 capsicum, sliced thinly
1 zucchini, sliced
5 tbs oyster sauce
oil for frying
1 packet hokkien noodles

Method
  • Heat a tablespoon of oil in a wok or large frying pan to high heat. Add the chicken to the wok and cook, stirring for 3 -5 minutes until the chicken is just cooked. Transfer the chicken to a plate and set aside.

  • Add another tablespoon of oil to the wok (or a tablespoon of water) and let it heat up to a high heat. Add the vegetables to the pan and stir fry for 3 - 5 minutes until the vegetables are cooked but still have some crunch.
  • While the chicken and vegetables are cooking, prepare the hokkien noodles by following the packet instructions.
  • Return the chicken to the wok and mix it through the vegetables.

  • Add the hokkien noodles and oyster sauce. Stir until heated through and the oyster sauce has mixed throughout the ingredients.
  • Serve immediately.
