This delicious chicken and broccoli stir fry is a regular in our house. It's great as is, but if you prefer your stir frys with a bit of zing, you could add some chillis or chilli sauce to yours.

Ingredients
500 g chicken fillets (thigh or breast), sliced thinly
500 g broccoli, cut into florets
1 onion, sliced thinly
2 carrots, sliced thinly
1 capsicum, sliced thinly
1 zucchini, sliced
5 tbs oyster sauce
oil for frying
1 packet hokkien noodles
Method
Heat a tablespoon of oil in a wok or large frying pan to high heat. Add the chicken to the wok and cook, stirring for 3 -5 minutes until the chicken is just cooked. Transfer the chicken to a plate and set aside.
Add another tablespoon of oil to the wok (or a tablespoon of water) and let it heat up to a high heat. Add the vegetables to the pan and stir fry for 3 - 5 minutes until the vegetables are cooked but still have some crunch.
While the chicken and vegetables are cooking, prepare the hokkien noodles by following the packet instructions.
Return the chicken to the wok and mix it through the vegetables.
Add the hokkien noodles and oyster sauce. Stir until heated through and the oyster sauce has mixed throughout the ingredients.
