Chicken and Broccoli with Oyster Sauce

Delicious and quick, healthy dinner

Chicken, chicken stir fry, chicken in oyster sauce, broccoli, snow peas
Chicken and Broccoli with Oyster Sauce.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 4 servings

4 tablespoons peanut oil
500g chicken breast, sliced
3 cloves garlic, crushed
1 onion,
300g Broccoli
150g Snow peas
300ml oyster sauce
2 tablespoons soy sauce
2 cups water
2 teaspoon cornflour
2 shallots, sliced

Step 1
In a hot wok or frying pan, add peanut oil and fry chicken until golden. Set aside.

Step 2
Fry onions, garlic, broccoli and snow peas together for 4-5 minutes. Add chicken back into the pan.

Pour oyster and soy sauce into the pan mix to coat.

Stir cornflour into the water and add to the pan, until sauce thickens (around 3 minutes).

Serve on noodles or rice garnished with shallots.

I made this using thinly sliced Beef that I marinated in 1 tablespoon each of Soy Sauce and Cornflour before stirfrying. I did not have snow peas so substituted sliced Green Onion (spring onion?) for the snow peas, added some cubed Tofu and tossed some Hokkien Noodles through the sauce whilst it was still in the wok.
A surprisingly mild yet tasty and satisfying meal that served 6 hungry adults.
