Chicken and Cheese Baguette with a Mango and Avocado Salad
This was a very easy meal to create and I used leftover cooked chicken that I had in the freezer.
If you do not have any, just boil some for a short time - breast meat is probably best for this, or even buy half a barbecue chicken and strip the meat.

Ingredients
For the Chicken baguette
1 small [link http://reviewclue.com.au/menissez-bake-at-home-baguettes/ baguette] or half a normal one
1½ tbsp soft butter
About ¾ cup chicken cooked, shredded
1½ tbsp onion, chopped
½ tsp garlic
1 large egg
About 35 g cheese, grated - I used feta as had some left over
Bit of thyme (optional)
For the Mango salad
Baby spinach leaves
1 mango, sliced
1 avocado, sliced
About ½ cup cooked bacon pieces
Caesar salad dressing
Method
For the baguette
Bake the baguette if using a bake at home one, and when cool, slice lengthwise.
Preheat the oven to 175°/155° fan forced.
Scoop out a trough from each half, and soak that bread in milk.
Butter the baguette halves.
Combine all the other ingredients, including the now soaked bread.
Put the mixture into the baguette halves, and press down so that it all fits.
Close the halves, and wrap in aluminium foil. Bake for 30 to 35 minutes.
Slice into serving portions when cool enough, and serve either hot or cold.
For the salad
Mix the spinach, cheese and mango together, adding any juice that is on the cutting board from the mango.
Add the avocado and bacon.
Put in the fridge till ready to serve, and then add the dressing.
I made my own Caesar dressing with lemon juice, garlic, Dijon mustard, Worcestershire sauce, mayonnaise and a bit of Parmesan.
Serve with the baguette slices for a very delicious meal and/or snack.
