Chicken and Chorizo Pie

This is less creamy than my Chicken and Mushroom Pie but still just as delicious. Leeks make a great accompaniment for both chicken and chorizo.



Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: 6 servings

Ingredients
1 pack ready-rolled puff pastry
1 onion
1 large leek
1 clove garlic
1 tbsp vegetable oil
1/4 roast chicken
4 small cooking chorizo sausages
2 tbsp white wine
3 tbsp crème fraîche
1 egg

Method
  • Preheat the oven to 180 Celsius.
  • Heat the vegetable oil in a large saucepan over a low heat.
  • Chop the leek and the onion and gently cook them in the oil for a few minutes.



  • FInely chop the garlic and add it to the pan with the onion and leek.
  • Turn up the heat, add the chorizo and chicken and cook until heated through.




  • Add the white wine and deglaze the pan for a few minutes so that any crispy bits get reincorporated into the sauce.



  • Turn down the heat again and add the crème fraîche.
  • Put the pie filling into a pie dish.



  • Unroll the puff pastry and lay it over the top. Trim the edges and then use any extra pastry to make some pastry cut-out shapes with a cookie cutter. Lay these on top.



  • Beat the egg and then brush it over the top of the pastry. Make a couple of holes in the pastry for the steam to escape.
  • Bake in the pre-heated oven for 20-30 minutes until the pastry is golden and the filling is bubbling.
