Makes: 4 servings
Ingredients
3 tablespoons olive oil
1 onion, chopped
6 cloves garlic, crushed
500g chicken, cut into bitesize pieces
4 potatoes, peeled and cubed
2 celery sticks, cut
2 carrots, cut
2 zucchini, cut
3 cups chicken stock
Salt and pepper to taste
Method
Add garlic and onion and cook until soft
Add chicken pieces and cook until slightly brown
Place all vegetables in the pot and stir
Cook until chicken and vegetables are tender - approximately 30 minutes
