Chicken and Kale Caesar Salad
Caesar salad traditionally has no chicken and is made with lettuce. In this recipe, I have altered this slightly and added chicken as well as kale.
It is an easy, refreshing and casual meal which even a beginner would have no problems with!

Cooking Time: 15 minutes
Serves: 2 - 3
Ingredients
1 chicken breast
3 rashers shortcut bacon, chopped
½ baby cos lettuce, separated
75 g pkt chopped kale (Coles)
2 eggs, soft boiled, halved
30 g parmesan, shaved
For the Caesar dressing
2 anchovy fillets - optional
1 egg yolk
1 garlic clove, quartered
About ¼ cup olive oil
30 ml lemon juice
Method
Heat a barbecue to high. Slit the top of the chicken, and cook on the barbecue (or stove top) for about 6 minutes each side.
Cover with foil, and leave to stand for five minutes.
Meanwhile, while this is cooking, fry the bacon pieces until they are brown. Put them on paper towels to get rid of any fat though there is little fat if you use shortcut bacon.
For the Caesar salad
Put the garlic, anchovies and egg yolk in a food processor and process until smooth (I did not use anchovies this time). I did not use the processor as the quantity was so small.
Gradually add in the oil in a thin stream.
Add the lemon juice and process until combined. Add salt and pepper if required.
Thinly slice the chicken.
In separate serving bowls, divide the kale, and lettuce.
Add the chicken and bacon.
Add the hard-boiled eggs.
Drizzle with the dressing and sprinkle with the parmesan.
