Chicken And Mango Burgers With Cauliflower Gratin

Being healthy doesn't mean you have to give up your favourite things such as burgers. I've teamed this one with a cauliflower gratin, which can be made with light cheese if you want to be super healthy, or simply replace with some steamed vegetables.

A Delicious Burger served with Cauliflower Gratin


Preparation Time: 25 minutes
Cooking Time: 20 minutes
Makes: 8 burgers

Ingredients
For the Burger Patties
500g lean chicken mince
4 tablespoons of chopped basil
400g can of chickpeas drained and rinsed
4 tablespoons of mango chutney
Olive oil for frying

For the Cauliflower Gratin
32 cauliflower florets
4 tablespoons of plain flour
2 cups of milk
1 cup of grated cheddar cheese
Pinch of salt
3 tablespoons of nuttelex
8 extra tablespoons of grated cheddar cheese for on top

For the Buns
8 Large sesame seed buns
4 Large pickles
3 tomatoes
1/2 cup of nuttelex to spread on the buns

Method
  • Process chickpeas for about one minute.

  • Processed chickpeas should look like this


  • Place chickpeas into another bowl and add in the chicken mince, chutney and basil.
  • Mix well with clean hands or combine the mixture.
  • Form mixture into patties and place on a plate.

  • Roll out patties to fit the size of your buns


  • In a fry pan add about 2 tablespoons of olive oil and heat on high.
  • Turn heat down to low and add in patties 2-3 at a time, making sure not to overcrowd the pan.
  • Cook patties for 5 minutes before gently flipping.

  • Burger patties should be cooked like this when flipped


  • Cook the other side for 5 minutes.
  • While burgers are cooking, slice tomatoes and pickles thinly to go on to the buns.
  • Spred the nuttelex on the buns and set aside for later.
  • In a large saucepan of boiling water and add in the cauliflower.
  • Cook cauliflower for 4-5 minutes until just half cooked drain and start to make the sauce.
  • In another saucepan, add the flour, cheese, milk, salt and nuttelex, heat on medium for 3-4 minutes stirring continuously until well combined and sauce is thick.

  • Cheese sauce should be thick like this


  • Turn off the heat and set aside.
  • Preheat oven to 200 degrees celsius.
  • For the gratin use mini casserole dishes or large ramekins big enough to hold 4 florets.
  • Place 4 florets into each ramekin, spoon 1-2 tablespoons of cheese sauce on top.
  • Add an extra tablespoon of grated cheese on top of each serve of cauliflower.

  • Place cheese on top before placing in the oven


  • Place ramekins in a baking tray and place in the oven.
  • Cook until the cheese has just melted. (Approximately 5 minutes)
  • As the patties finish cooking take each one out and place on some paper towel to drain the excess oil.
  • Continue to cook all patties until all have been cooked.
  • To serve place slices of pickles and tomato on the buns and top each one with a chicken pattie.
  • For restaurant style place burgers onto a wooden boards, or just a plate if you don't have enough boards.
  • Remove the tray of cauliflower from the oven.
  • Make sure to use an oven mitt and carefully place ramekins of cauliflower on the side of the board or plate.
  • Serve immediately to your friends and remind them that the cauliflower ramekins are very hot.
