Chicken and Mango Monster Burger with Guacamole and Salsa
This was not just a burger, but an unusual one that took quite a while to make!
If mangoes are no longer in season, you could use tinned ones, but either way this hamburger with mango salsa is delicious.
Preparation Time: 35 minutes
Cooking Time: 10 minutes
Serves: 1 large burger
Ingredients
½ ripe mango
Small red chili
1½ tsp lime juice
A pinch of brown sugar
Small garlic clove
1 ripe avocado
Pinch of cumin
2 small chicken fillets
1 tbsp harissa
3 tbsp olive oil
1 small egg - I used half
2 tbsp breadcrumbs
1 hamburger roll
30 g rocket
Method
**For the salsa*
Peel the mango and cut into slices. Cut it into small pieces.
Cut the chili and remove the seeds.
Puree about a third of the mango, and then mix it with the small mango pieces, chili, and half a tsp of the lime juice.
Season with salt and sugar.
For the guacamole
Peel and cut the avocado and chop the garlic.
Puree the flesh with the garlic and a tsp of the lime juice - I did this with a fork. Season with salt, pepper and ground cumin.
For the chicken patties
Wash the chicken, pat dry and cut into very tiny pieces.
Mix the harissa, 2 tbsp of oil, and a bit of salt.
Mix this in with the chicken pieces.
Knead together with the egg and breadcrumbs, and season with salt and pepper.
Form 2 patties and heat 1 dstp of oil in a pan and dry the patties for about 3 to 4 minutes on each side, or until golden.
To make up
Cut the bread roll, wash the rocket, and dry.
Smear the roll with guacamole and add the lettuce.
Next add the chicken patties.
Then add the rocket and the mango salsa.
Put the other half of the roll on top, and I challenge you to eat it!
