Chicken and Rice Casserole
Delicious, creamy and an unusual taste, I added some Jalapenos to the dish after it was cooked.
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Serves: 4
Ingredients
4 tbsp butter
3 tbsp flour
1 tsp dried thyme
1 cup chicken soup
1 cup milk
2 cups cooked chicken, diced
1½ cups cooked rice
¾ cup peas
1 tbsp breadcrumbs
1 tbsp Parmesan cheese, grated
Method
If you do not have cooked chicken buy either breasts, and cook till JUST tender or thighs and cook a bit longer, and then shred the meat. I had some chicken meat left over from [link http://recipeyum.com.au/traditional-jewish-chicken-soup/ this recipe].
Melt 3 tbsp of the butter or ghee over a medium heat, and put in the flour and thyme - cook for a minute.
Gradually stir in the soup and the milk, stirring until it is thick and smooth.
Spray a shallow baking dish.
Preheat the oven to 200°/180° fan forced.
Stir in the cooked chicken and add some salt and pepper to taste - keep aside.
Spread the rice in the oiled baking dish, and put the peas over this.
Pour in the creamed chicken mixture over the peas.
Dot with the remaining tbsp of butter.
Add the bread crumbs and cheese after mixing it together first.
Bake until hot and bubbly - about 25 minutes.
I heated it up the next day with my potatoes au gratin.
