Chicken and Sesame Lettuce Cups

Simple and quick recipe. Ideal if you have left over BBQ chicken.



Preparation Time:20 minutes
Cooking Time: 0 minutes
Makes: 4 servings

Ingredients

100g rice vermicelli noodles
2 tablespoon soy sauce
2 tablespoons honey
1 teaspoon ginger, grated
1 teaspoon sesame oil
2 cups BBQ chicken, shredded
1 cup bean sprouts
1 carrot, thinly sliced
8 large butter lettuce leaves
Sesame seeds to sprinkle



Method

  • Place the noodles in a large bowl.
  • Pour over boiling water and set aside for 10 minutes.



  • Rinse noodles under cold running water. Drain.



  • Combine soy sauce, honey, ginger and sesame oil in a small bowl.



  • Combine the chicken, bean sprouts, carrot and noodles in a large bowl.





  • Drizzle over the dressing and gently toss to coat.
  • Place 2 lettuce leaves per bowl.
  • Divide the chicken mixture evenly among the 4 bowls.
  • Sprinkle with sesame seeds.
