Chicken And Tomato Pesto Pasta Bake With Easy Bechamel

This recipe is fast, easy, affordable, and popular with the kids. Plus it freezes well so it's perfect for a meal planning family.

Preparation Time: 10 mins
Cooking Time: 30-40 minutes
Makes: 8 servings

1kg chicken breast, diced
1 jar pre-made tomato pesto
1 packet pasta of choice

250g cream cheese
1/3 cup cream or milk
1 tablespoon olive oil
3 tablespoons Insanely Healthy Concentrated Vegetable Stock or a stock cube
1/3 cup of white wine (optional)
2 bay leaves
Cheese to grate on top.

Vegetables, or salad for serving.

Boil water and add pasta.
Add chicken to a saucepan or frying pan and cook until browned.
Add pesto to the chicken and cook through.
Strain pasta and place in a baking dish. Mix chicken and pesto through well and set aside.
Preheat oven to 150C.

Bechamel Sauce
Add wine, cream or milk, and stock to a small saucepan and bring to a gentle simmer.
Add cream cheese and olive oil.
Stir constantly until the cheese melts. If there are a few lumps just whisk them out.

Pour evenly over the chicken and pesto and grate cheese on top
Bake until the cheese is melted.

Serve with salad or vegetables and freeze any leftovers for a fast, easy lunch.
