Chicken And Vegetable Mini Quiches for Dogs
Jasper, our King Charles Cavalier, has a Grade 6 Heart Murmur; there is ongoing specialist care from a cardiologist and a natural health vet practitioner; daily medication to ensure heart and lung stability; and a varied and nutritious diet to maintain weight and general well-being.
Our little man has always had a relatively healthy diet, but, as per humans, he can be susceptible to the odd feast or three of inappropriate snacks, treats and fatty foods.
The heart medication maintains a good quality of life for Jasper, but does impose a series of side effects, such as increased thirst, and kidney issues. To reduce the impact on his kidneys, his natural health vet practitioner recommends a diet based on chicken, rather than other protein-based meats.
She also recommends eggs, kale and brown rice to provide him with additional nutrients, to offset some of the effects of the medication.
My latest incarnation of gourmet healthy meals for Jasper include these Chicken and Vegetable Mini Quiches, which he devours with great gusto.
Chicken and Vegetable Mini Quiches for Dogs incorporates many healthy and nutritious ingredients that help maintain weight and general wellbeing in your little furry friend.
Preparation Time: 15-20 minutes
Cooking Time: 45 minutes
Makes: 14 Mini Quiches
Ingredients
1 Chicken Breast
1 Small Zucchini
1 Small Carrot
1 Celery Stick
1 Small Potato
¼ Sweet Potato
½ Cup Brown Rice
For the Batter
3 Tablespoons Coconut Flour
3 Eggs
¼ Cup Coconut Water
1 Cup Water
¼ Teaspoon Fennel Seeds
¼ Teaspoon Turmeric
2 Beef Stock Cubes (see note below)
Method
Cube the chicken breast into small pieces. Heat a griddle or frying pan with a little cooking oil spray, and sauté the chicken. Set aside to cool.
Dice the zucchini, carrot, celery, potato and sweet potato. Bring a saucepan of water to the boil, and par-cook vegetables for 5 minutes.
Bring another saucepan of water to the boil, and add the rice until soft and chewy for approximately 15 minutes.
Combine all the cooked ingredients into a large mixing bowl, and set aside while making the batter.
In a separate mixing bowl, add the coconut flour, eggs, coconut water, and water and whisk the ingredients until combined.
For additional natural flavouring, add the fennel seeds, turmeric and beef stock cubes, and mix through the batter.
Pour the batter into the cooked ingredients and stir through.
Clockwise from top left ... combine the cooked chicken and vegetables then pour the batter in with the chicken and mix through all ingredients.
Fill a muffin tin, or similar, with the quiche mixture.
Pre-heat an oven to 180°C and place the Chicken and Vegetable Mini Quiches into the oven to bake for 45 minutes.

When cooked, and tops are golden brown and have a firm crust, remove from the oven and allow to cool. Place into an airtight container, and store in the refrigerator for up to 4-5 days.
Serve your little furry friends a Chicken and Vegetable Mini Quiche as a snack, or bundle two or three quiches together for a main meal.

The Beef Stock Cubes were made from leftover
Beef and Vegetable Broth , made for my dog Jasper. I placed the leftovers in an ice-cube tray, which I give to him as ice treats during summer. However, the ice treats can be repurposed as a natural way to flavour food.
Beef Stock Cubes can be made from Beef and Vegetable Broth by freezing leftovers in an icecube tray.
