Chicken Asparagus and Almonds with a Rice and Apricot Pilaf

This is another of my "MIX N MATCH" summer meals.

I have used a jar of asparagus in this recipe as I find fresh asparagus gets tough when baked, and I have teamed the chicken with a rice and dried apricot pilaf.

It is a very filling menu and needs no entre or sweets!

Preparation Time: 20 minutes
Cooking Time: 65 minutes
Makes: 2 - 3 servings

Ingredients
For the chicken
5 chicken legs
½ tsp salt
½ tbsp flour
90 g butter
75 g blanched almonds, toasted
1 tbsp lemon juice

For the rice and apricot pilaf
1½ tbsp butter
½ large shallot (or onion)
¾ cup white rice
1¾ cups water
1 - 2 tbsp parsley, finely chopped
1 tbsp lemon juice
100 g dried apricots
1 tbsp raisins
30 g blanched almonds, toasted

Method
For the chicken
  • Preheat the oven to 160° fan forced or 180° ordinary.

  • Dip the chicken legs in a mixture of the flour, salt and some pepper.

  • Heat the butter in a frying pan or wok and add the chicken legs. Cook them till they brown and then remove and place them in an ovenproof dish.


  • Fry the almonds -AS THE RICE ALSO HAS TOASTED BLANCHED ALMONDS, DO BOTH LOTS OF ALMONDS TOGETHER -in the remaining margarine until browned.


  • Take out the 30 g almonds for the rice, and add lemon juice to the remaining almonds.

  • Pour this over the chicken in the dish.


  • Bake for ¾ of an hour, checking if you need to add water to the chicken if it starts to stick.

  • Add the asparagus and cook a further 15 minutes.


  • When you put the chicken in the oven, start making the rice.

  • For the rice and apricot pilaf
  • Heat the butter and fry the onion till they are just going golden.

  • Add the rice and stir for 30 seconds so that the rice gets coated with the butter.


  • Add the hot water, some salt and pepper to taste, lemon juice and parsley.

  • Cover and simmer for 10 minutes.

  • Stir in the uncut apricots, raisins and almonds, and simmer for another 5 minutes.


  • Take off the heat and allow to stand, covered for about 5 minutes before serving.

  • Serve with the chicken or mix n match with other meals.
