A quick and easy stir-fry dish of chicken and asparagus. It is hearty and full of flavour.

Makes: 4 servings
Ingredients
4 garlic cloves, crushed
10-cm piece fresh ginger, thinly sliced
2 chicken breast fillets, diced
2 bunches fresh asparagus spears, cut into short lengths
2 tbsp soy sauce
1 tbsp sesame oil
steamed rice, to serve
Method
Heat pan over high heat, add the oil and swirl to coat the side. Add the garlic, ginger and chicken and stir-fry for 1-2 minutes until chicken changes colour.
Add the asparagus and stir-fry for a further 2 minutes until soft.
Stir in the soy sauce and 60ml water, cover and simmer for 2 minutes until chicken is tender and vegetables are slightly crisp.
Stir in sesame oil. Serve immediately with steamed rice.
