Chicken Avocado Wraps
If you like wraps and avocado, and want to cook a fast and easy dish - this is the perfect dish for you! It is great for when you are cooking alone or with some friends - and its healthy too.
Preparation Time: 25 minutes
Cooking Time: 10 minutes
Makes: 3-4 filled wraps
Ingredients
3 - 4 Small (whole grain) wraps
150g Chicken fillet
1 Avocado
40g Rocket
4-6 Sun Dried Tomatos
2 spoons of pesto
1/2 Cucumber
Some Shredded cheese (optional)
Method
Cut the chicken fillet in slices and put them in a heated pan with some oil. Cook until its well done and there is no pink color inside the chicken pieces. You can always season with salt and pepper, makes it more tasty.
Take out some sun dried tomatoes and cut them. Cut the cucumber in small pieces. Divide avocado into two pieces and gently remove the pit/seed with a unsharp object (since it can be very tricky and slippery). Cut the avocado in squares - and then scoop out with a spoon.
Mix the rocket, cucumber, tomatoes, avocado and pesto in a bowl. Then add the mix on to heated wraps. Top it with the cooked chicken, and some shredded cheese if desired - so quick, so easy, so tasty.
I also added some ''Chunky Guacamole'' for some more of that avocado flavour in the wraps.
