Chicken Balls With Water Chestnuts And Lychees

This is an unusual combination of chicken meat, mushrooms, water chestnuts and has a lychee sauce as well as whole lychees.

The flavour of these ingredients go very well together, with the crunchy water chestnuts, the slightly sweet lychees, and the chicken balls.

It was one of those recipes where I kept eating "just a little bit more" after I had finished till I realised I had eaten enough for two people!

Preparation Time: 35 minutes
Cooking Time: 20 minutes
Makes: 4 servings

For the Chicken Balls:
250 g cooked chicken
onion, chopped
6 water chestnuts
6 medium mushrooms
1 tbsp cornflour
1 tbsp soy sauce
1 tsp sherry
1 egg white, stiffly beaten
Oil for deep drying

For the Sauce:
1 tin lychees in syrup
cup chicken stock
1 tbsp soy sauce
1 tbsp cornflour
1 shallot

To make the chicken balls, finely chop the cooked chicken, or cook a few pieces of chicken and shred it.

This is how I bought the chicken, and then chopped it finely

Chop the vegetables finely.

Mix together the cornflour, soy sauce, sherry and a stiffly beaten egg white.


Add this to the chopped cooked chicken and shape into small balls.

You MAY need to add a bit of flour if it is too moist

Fry in deep hot oil until golden brown.


Drain on paper towel.


For the sauce:
Mix cup of lychee syrup and the chicken stock, and bring to the boil. Mix the soy sauce and the cornflour.


Add to the lychee mixture.

Cut the shallot into 2 cm pieces and add along with the drained lychees and the chicken balls to the sauce.

Heat thoroughly and serve.
