This is a quick and easy meal for using up some leftover cooked chicken. You could use pork or ham instead of chicken. The kids will enjoy it too.

Ingredients
1 packet of any type of 2 minute/instant style noodles
1 cup chopped cooked chicken
1/2 cup corn kernels
4 eggs
1/4 cup milk
1 dessertspoon chicken stock powder
1 dessertspoon chopped garlic chives (optional)
oil for frying

Cook the noodles but do not add flavouring sachet to water.
(If you are cooking chicken flavour 2 minute noodles you can use the flavouring sachet if it is the powder type instead of the tablespoon of chicken stock powder later in the recipe.)
Beat the eggs and milk in a medium size bowl.

Add the drained noodles, chicken, stock powder and corn. Add garlic chives (optional).

Add rest of ingredients
Heat enough oil to cover the base of a non stick frying pan.

Cook in a non stick fry pan
Cook until the under side is firm and golden brown.
Turn and cook the other side until golden brown.
Serve with a salad of tomato, lettuce and cucumber.
