Chicken Crepes With Cheese Sauce And Avocado

In this case I had them in the freezer and as this brand is very good, I would not bother making them myself.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 2 crepes

Ingredients
2 crepes
2 tbsp butter
1 tbsp flour
¼ cup milk
3 tbsp grated cheese
1 small chicken breast
½ avocado, sliced
About 50 g [link http://reviewclue.com.au/fresh-mediterranean-antipasto-mix-from-woolworths/ antipasto mix]
50 g feta cheese

Method

  • Cook the small chicken breast by either grilling or boiling for a short time -do not overcook.

  • Make the white sauce by melting butter in a frypan, and adding the flour. Take off the heat and gradually add the milk, adjusting the quantity to suit the thickness.

  • Add the grated cheese, to taste, plus pepper.


  • Break up the chicken and add to the white sauce.

  • Add the antipasto mix or similar, plus the extra feta.


  • Turn off the heat and add the avocado and mix gently.


  • Defrost the crepes in the microwave and heat for a very short time till they are hot.

  • Put the filling on the side of each pancake.


  • Roll up the pancakes and serve with the extra sliced avocados, plus grated pepper, on top.
