Chicken Dirty Lemon Rice

I love one pot dishes that minimise washing up. My kids call the rice, dirty rice as it picks up all the colour and flavour from the seared chicken. Marinading the chicken with lemon juice means you're guaranteed the most juicy and tender meat for your meal.



Preparation Time: 15 minutes
Cooking Time: 45 minutes 30 minutes marinating
Serves: 4

Ingredients
Dash olive oil for frying
4 chicken thighs
4 chicken drumsticks
1 large lemon
4 large garlic cloves, crushed
2 tbsp mixed dried herbs
1 onion, finely chopped
900ml chicken stock
325g long grain rice
Salt and pepper

Method
  • Zest and juice the lemon.
  • Mix the lemon juice, zest, garlic and 1 tbsp of mixed dried herbs together to make a marinade.



  • Add the chicken to the marinade, cover and refrigerate for at least 30 minutes.
  • In a heavy based pan, heat the oil over a medium heat and brown the chicken on all sides. Remove from pan and set aside.
  • Preheat the oven to 180c fan.



  • In the pan you cooked the chicken, fry the onion until translucent.
  • Add in the stock, rice and final tablespoon of dried herbs, simmer gently for one minute.



  • Add the chicken to the top, skin side up on the thighs.
  • Cover and then place in the oven for 35 minutes.
  • Remove the lid and cook for a further 10 minutes until the rice is tender and all liquid has been absorbed.
