Chicken Egg Chinese Broccoli Lunch Box

This chicken, egg & chinese broccoli with rice recipe makes a great lunch box alternative to sandwich, salad or pasta. It is so simple and easy to make.



Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 6 servings

Ingredients
6 chicken thigh fillets, cut into bite-size pieces
2 bunches chinese broccoli, cut into 3cm pieces
4 eggs, lightly beaten
1 piece thumb-size ginger, sliced into thin strips
3 tablespoons oyster sauce
2 tablespoons soy sauce
4 tablespoons sesame oil
Steamed jasmine rice, to serve
Roasted sesame seeds, to serve (optional)



Method
  • In a large saucepan, heat the sesame oil on medium high heat.
  • Add in the ginger and fry until golden and fragrant.



  • Pour in the beaten eggs.



  • Scramble the eggs until cooked.



  • Move the eggs to the sides of the pan.
  • Add in the chicken and cook for 5 minutes, stirring occasionally.



  • Pour in the soy sauce and oyster sauce.



  • Mix well until combined.



  • Add in the Chinese broccoli and pour in 1/2 cup of water.



  • Cover with lid and leave it to steam for 5 minutes or until the Chinese broccoli is just wilted.
  • Uncover and mix well.



  • Serve with steamed jasmine rice and roasted sesame seeds.
