Chicken Filo Parcels
This is a great way to use up left-over chicken. These can be made as a large pie, or as smaller individual parcels. Either way they are delicious.
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: 6-8 servings
Ingredients
Pack of sheets of filo pastry
400g chicken or turkey
2 large onions
2 carrots
300g mushrooms
50g butter
50g flour
300-400 ml chicken stock
5-6 tbsp double cream
Method
Preheat the overn to 180 Celsius.
For the sauce
Melt the butter in a saucepan until it just starts to foam.
Add the flour and whisk it in. Cook until it starts to turn a straw colour. Take care that it doesn't burn.
Gradually incorporate the chicken stock into the paste and then add the cream.
Remove from the heat until ready to incorporate with the vegetables.
For the parcels
Chop up the onions and carrots.
In a large pan melt some butter, or warm some vegetable oil.
Add the onions and carrots and gently sweat until softened.
Gently wipe the mushrooms and chop them into slices.
Add the mushrooms to the pan and cook for a further 5 minutes.
Shred the chicken and then add to the pan.
Add the sauce to the chicken and vegetable mixture.
Stir well and then cook a little more until thoroughly heated.
Meanwhile, prepare the parcels.
You can either use one large dish, or some smaller ones. Either way the basic method is the same.
Lay 2 or 3 sheets of filo pastry to line the bottom of the dish. In a large dish I would use a couple more sheets to give the parcel a bit more structure.
Pour in the filling, but take care it doesn't come too high up the edge.
Bring all the edges together and press them together to form a scrunched-up parcel.
Bake in a pre-heated oven for 15-20 minutes or until the pastry is golden.
