Chicken in Peanut Curry
This curry was more like a satay - though richer somehow!
Easy to make, this is a recipe I will make again - do not overcook the chicken however, or it dries out.
Preparation Time: 15 minutes
Cooking Time: 25 minutes
Serves: 3
Ingredients
470 g coconut milk
1 tbsp curry paste-this gives weak spice
2 tbsp peanut butter
1 tsp sugar
2 tsp fish sauce
2 chicken breasts - about 370 g
½ tbsp garlic, crushed
½ onion, chopped
Corn flour
Rice or potatoes
Cauliflower - optional
Method
Heat the coconut milk, curry paste, peanut butter, sugar and fish sauce in a small pan until it just starts to boil.
Leave it to cool a bit, and then add some corn flour to thicken it.
While the sauce is cooling, stir fry the onion, and garlic. If using cauliflower, put this in now - it need not be cooked through when finished.
Cut up the chicken into small pieces and stir fry with the onion until it is cooked through. Do NOT overcook it.
Combine this chicken mixture with the sauce, and heat it.
Make some rice or whatever else you wish with it, and serve the chicken over this. I microwaved a potato and served it over this.
I also added some cauliflower in with the chicken - optional.
