Chicken Katsu Bento

Chicken Katsu is a popular Japanese dish of deep fried chicken cutlet drizzled with tonkatsu sauce. This dish is easy to prepare at home, makes it a great dish for the family and kids.



Preparation Time: 30 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
2 chicken breast fillets
salad leaves, to serve
cherry tomatoes, to serve
tonkatsu sauce, to serve
Japanese mayonnaise, to serve
steamed Japanese rice, to serve

Marinade
2 tbsp cooking sake
a pinch of salt
a pinch of black pepper

Coating
2 eggs, lightly beaten
potato starch
panko breadcrumbs

Method
  • Wash the chicken breast fillets and pat dry with paper towel. Slice the chicken breast diagonally.



  • Marinade the fillets with sake, salt and black pepper for 15 minutes.



  • Coat a slice of marinated fillet in potato starch, then dip into the egg, finally coat with panko breadcrumbs. Repeat with the remaining fillets. Refrigerate for 15 minutes.



  • Preheat oil in a deep-fryer. Deep fry the crumbed fillet, in batches, until golden brown and crispy. Place on paper towels to drain excess oil.



  • Drizzle tonkatsu sauce and mayonnaise over chicken katsu and serve with rice and salad.
