Chicken, Leek & Mashed Potato Pie

This tasty chicken & leek pie in a delicious white sauce, topped with cheesy baked potatoes is an amazing comfort food.

Preparation Time: 15 minutes
Cooking Time: 50 minutes
Makes: 4 servings

For the Mash
500g potatos, peeled and cut into chunks
25g butter
100ml milk
50g Cheddar cheese, grated
15g Parmesan, grated

25g butter
1 leek, thinly sliced
2 shallots, finely chopped
300ml chicken stock
2 tbsp flour
100ml double cream
1 chicken breast, diced
100g frozen mixed vegetables
1 tbsp chopped parsley

Pre-heat the oven to 180C fan-forced.

Cook the potatoes in salted water for 15 minutes until tender. Drain and using a fork, mash with butter, milk and the grated cheeses.

Melt the butter in a pan, cook the leek and shallot gently for 10 minutes until soft.

Add in the diced chicken and cook until they are no longer pink.

Stir in the flour and cook for one minute, then stir in the stock a little at a time, to make a smooth sauce.

Stir in the cream, then cook, stirring until the sauce just comes to the boil. Stir in the mixed vegetables and parsley, then remove from the heat and season to taste.

Transfer into a baking dish and top with mash.

Bake in the oven for about 20 minutes and then finish off for a few minutes under the grill until top is golden brown.

Spoon to plates and serve.
