Chicken Meatballs Skewers with Teriyaki Sauce
Simple and easy chicken meatball skewers with teriyaki sauce make a great entertaining snack for the whole family.
Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes: 6 skewers
Ingredients
6 bamboo skewers
Chicken Meatball
500g chicken thigh fillets
1 onion
1 spring onion
1 egg
1 tbsp soy sauce
3/4 tsp salt
1 cube chicken stock
1 tbsp cornflour
1 tbsp water
Teriyaki Sauce
3 tbsp soy sauce
4 tbsp water
1 1/2 tbsp sake
1 1/2 tbsp mirin
2 tbsp sugar
1 inch onion, grated
1 inch ginger, grated
Method
Preheat oven to 200C fan-grill.
Place all the meatball ingredients in a food processor, pulse until well blended. Set aside for 1 hour.
Shape chicken mixture into 24 balls.
Grill the chicken in a preheated oven for 30 minutes, turning halfway through cooking, until golden brown.
In a pan, cook all the teriyaki sauce ingredients until sugar has dissolved. Add in the meatballs and cook until the sauce has thickened and reduced slightly.
Insert meatballs into skewers, 4 balls in each skewer. Drizzle over the sauce and serve.
