Chicken Mushroom Pie

This is a simple yet scrumptious chicken and mushroom pie that’s perfect for any day of the week.

Preparation Time: 15 minutes
Cooking Time: 30-40 minutes
Makes: 4 servings

Ingredients
Olive oil
2 chicken thigh fillets
400g mushrooms (any kind will do)
1 pack short-crust pastry
1 egg, beaten to glaze
50g butter
5 tablespoons sour cream
½ tablespoon salt
1 tablespoon cracked pepper


Method
  • Heat oil in frying pan over medium heat.
  • Fry chicken thighs for 3 minutes on each side or until cooked through; set aside to cool.


  • Quarter mushrooms.
  • Melt butter in frying pan over medium heat.
  • Sautee mushrooms for 5 minutes or until cooked through.


  • Meanwhile, shred chicken with a knife and fork.


  • Remove mushrooms from heat; add chicken.
  • Season with salt and pepper.
  • Mix to combine; set aside to cool completely.


  • Preheat oven to 180°C (fan-forced).
  • Grease and line baking tray with baking paper.
  • Line baking tray with pastry.
  • Stir sour cream through chicken and mushroom filling.
  • Brush sides of pie with egg before evenly spooning filling into tin.


  • Cover pie tin with a sheet of pastry, pressing edges of top sheet with sheet/s lining tray to form a seal; crimp edges using a fork if you like.
  • Brush top of pie with egg; make a couple of slits in top of pie with knife.


  • Bake for 30-40 minutes or until pastry is golden.
  • Allow to cool for 5 minutes; serve.
