Chicken Mushroom Pumpkin Risotto

This risotto is creamy and moreish. It packs a punch and will fill you up on a winter's evening. Perfect for dinner or lunch, this recipe will become a sure family favourite.

Preparation Time: 10 minutes
Cooking Time: 45 minutes
Makes: 6 servings

Ingredients
2 small onions
500g chicken thighs
1 tbs garlic
2 cups of button mushrooms
2 cups of roast pumpkin, cubed
Handful of baby spinach
1 cup of white wine
200ml cream
2 tbs butter
1 tsp curry powder
1 tbs chilli
1 tbs parsley
½ tsp cayenne pepper
2 ½ chicken stock
3 cups of rice of uncooked rice

Method
  • Slice the onions and sauté in butter in a saucepan.
  • Add the sliced mushrooms, garlic, curry, chilli, parsley and pepper.

  • Cut the chicken into small pieces and add to the saucepan.
  • When the chicken is cooked through, add 1 cup of the stock and the white wine.

  • Add the rice and gradually add the stock, slowly simmering the risotto.

  • You may need to add additional water.
  • When the rice is nearly cooked, add the roast pumpkin cubes and the spinach.
  • Stir through and pour in the cream.
  • Allow the sauce to reduce.
  • When the rice is cooked through, serve.
  • Season with pepper, salt and top with cheese.
