Chicken Mushroom Sweetcorn Soup
Everybody loves chicken & sweetcorn soup. It's simple. It's hearty. It's tasty. Try this creamy sweetcorn soup with a twist
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 6 servings
Ingredients
2 tbsp vegetable oil
3 chicken breast fillets, cut into bite-size pieces
4 slices middle bacon, roughly diced
500g button mushrooms, quartered
2 x 420g tinned creamed sweetcorn
2 cubes vegetable stocks
Salt & black pepper, to taste
Crusty bread rolls, to serve
Method
Heat the vegetable oil in a large stockpot.
Add in the bacon pieces and stir-fry until browned.
Add in the chicken pieces and cook until the chicken turns white.
Add in the vegetable stock cubes and season with black pepper. Mix well.
Add in the mushroom pieces. Mix well.
Pour in the creamed corn and 600ml water. Mix well.
Cover and bring to the boil. Turn the heat down and simmer for 5 minutes. Season with salt and black pepper.
Spoon to a bowl and serve with crusty bread roll.
