Chicken Mushroom Sweetcorn Soup

Everybody loves chicken & sweetcorn soup. It's simple. It's hearty. It's tasty. Try this creamy sweetcorn soup with a twist



Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 6 servings

Ingredients
2 tbsp vegetable oil
3 chicken breast fillets, cut into bite-size pieces
4 slices middle bacon, roughly diced
500g button mushrooms, quartered
2 x 420g tinned creamed sweetcorn
2 cubes vegetable stocks
Salt & black pepper, to taste
Crusty bread rolls, to serve



Method
  • Heat the vegetable oil in a large stockpot.
  • Add in the bacon pieces and stir-fry until browned.



  • Add in the chicken pieces and cook until the chicken turns white.



  • Add in the vegetable stock cubes and season with black pepper. Mix well.



  • Add in the mushroom pieces. Mix well.



  • Pour in the creamed corn and 600ml water. Mix well.



  • Cover and bring to the boil. Turn the heat down and simmer for 5 minutes. Season with salt and black pepper.



  • Spoon to a bowl and serve with crusty bread roll.
