Makes: 4 servings
Ingredients
4 chicken thigh fillets, sliced
5 sprigs of rosemary, leaves picked and chopped
2 garlic cloves, crushed
1 lemon, rind grated, juiced
1 tablespoon olive oil
salt and ground pepper
250g pasta of your choice
100g semi dried tomatoes, chopped
60g marinated artichokes, drained and sliced
1 bunch lettuce, rocket or butter
100g fresh ricotta
Method
Place the chicken thighs in a medium bowl.
Add rosemary, garlic, lemon juice, lemon rind and olive oil.
Season with salt and pepper.
Cover and refrigerate until required.
Cook pasta in a large saucepan of boiling water, according to instructions.
Drain pasta and return to the pan.
Add the semi dried tomatoes, artichokes, lettuce and ricotta.
Season with salt and pepper.
Heat olive oil in a frying pan.
Cook the chicken for 2 minutes each side or until golden and cooked through.
Add chicken to the pasta salad and mix through.
