Chicken Patties with Tomato Salsa

These chicken patties or cakes can be used as an entre, finger food, buffet food or as I did, as a main meal.

Although there appears to be a lot of ingredients, it is quite a simple recipe to make.

Preparation Time: 30 minutes
Cooking Time: 15 minutes
Serves: 3

For the mayonnaise
½ avocado
1½ tbsp good quality mayonnaise

For the salsa
1 large vine ripened tomato, finely diced
About ¼ purple onion, diced finely
2 tbsp parsley
Juice of ½ lemon
Olive oil

For the chicken
About 5 slices short cut bacon
About 400 g chicken thighs
1 small egg
1 - 2 chilies, finely chopped
Zest of a small lemon
Olive oil

For the mayonnaise
Roughly chop the avocado, and either put it in your processor, or hand mash it with the mayonnaise, a pinch of salt and pepper.


Cover the bowl with cling wrap.

For the salsa
Mix the tomato, onion, parsley, lemon juice, a pinch of salt and pepper.

Add a bit of olive oil, and put this aside.


For the chicken
Preheat the oven to 180°/160° fan forced.

Cook the bacon in a pan until it is soft.

Add the onion, chili and continue to cook for a few minutes, but do not let the bacon go crisp.

Remove from the heat and let it cool a bit.

Cut the thigh meat up roughly and put it in a food processor, or mincer and process until it is minced.


Add to this the contents of the pan, the egg, lemon zest and process once more until it is all mixed up.

If the mixture is very damp, add some bread crumbs - I added just a tbsp.

Add some pepper, to taste, and salt if required.

Using wet hands, form the chicken into small balls, or whatever size you wish (larger if for main meal). Press them so that they flatten out slightly, and are not round.

Add some oil to a pan, and cook for about 2 - 3 minutes each side over a medium heat.


Once you have cooked them to almost done, transfer them into the oven for about 5 minutes to finish cooking, while you get everything else ready.
