Chicken Rice Porridge

Bubur ayam is a popular Indonesian breakfast of rice porridge cooked in chicken broth, serve with chicken slices, fried golden bread and fried shallots. It is a warm and comforting breakfast dish for the family.



Preparation Time: 5 minutes
Cooking Time: 50 minutes
Makes: 4 servings

Ingredients
1 cup uncooked rice, washed, drained
4 chicken thigh fillets, washed
2 sticks golden bread, thinly sliced
fried shallots, to serve
soy sauce, to serve
salt and white pepper powder

Method
  • Bring 8 cups of water to the boil. Add in the chicken and cook for 10 minutes until cooked through. Transfer the chicken to a bowl, shred into pieces.



  • Add the rice into the stock, cover and cook, stirring occasionally, for 30-40 minutes until rice turns into porridge. Season with salt and pepper.



  • Divide porridge among bowls, add the shredded chicken, golden bread slices and fried shallots. Serve warm with soy sauce.
