Chicken Salad And Coriander Sandwich

There are so many ways to vary the humble sandwich. I love multi grain breads, chicken and coriander so some days I combine these items with a few additional ingredients to make a nourishing and tasty sandwich for my lunch.

There are many possible variations depending on personal preferences and the items you have on hand. Any type of sliced bread or a fresh roll can be used. Other types of cooked meat could be used. A little coleslaw can be used instead of the carrot, as long as the coleslaw doesn’t have too much dressing on it. Chopped chilli adds a spicy hit.


Preparation Time: 5 minutes
Makes 1 sandwich

Ingredients
2 slices multi grain bread of choice
Margarine or butter
Slices of cooked chicken
Few slices of cucumber
Few slices of red onion
2 tablespoons grated carrot
2 tablespoons chopped coriander
1 dessertspoon oyster sauce

Ingredients

Method
• Toast the slices of bread.
• Spread with butter or margarine.
• Place slices of cooked chicken on one slice of toast.

• Add slices of cucumber.
• Add slices of red onion.

Add onion

• Add grated carrot.
• Add chopped coriander.

Add coriander

• Spread a little oyster sauce on the second slice of toast.

Spread oyster sauce on second slice of toast

• Put second slice of toast on top to complete the sandwich.
• Serve garnished with coriander and enjoy.
