Chicken Tofu Pesto Pasta

This one is a huge hit with the kids and the mums. It only takes a few minutes to prepare, is full of goodness and protein, and has a few hidden vegetables too. The tofu we used and recommend are lightly-fried tofu patties, with chopped vegetables mixed into it - including carrots, mushrooms, and corn. Once it's all fried up with the chicken, the kids won't know what's what - only that it tastes great!

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2-4 servings

Ingredients
300g chicken tenderloins
100-200g fried tofu
150g spiral pasta
2 tbsp pesto sauce
1 Tbsp Oil

Method

  • Place a large pot of water on the stove and bring to the boil.

  • Add the pasta into the boiling water.

  • Dice the chicken and tofu.



  • Add oil into a saucepan and fry the chicken until brown. Add in the tofu and fry for another minute, then set aside.



  • Strain the pasta and place into the saucepan. Return to the heat and fry quickly on high for 30 seconds to crisp the pasta slightly.

  • Turn off the heat and add in the pesto sauce.



  • Mix through, top with parmesan, garlic salt, and grated cheese and serve!
