Chicken Tofu Pesto Pasta
This one is a huge hit with the kids and the mums. It only takes a few minutes to prepare, is full of goodness and protein, and has a few hidden vegetables too. The tofu we used and recommend are lightly-fried tofu patties, with chopped vegetables mixed into it - including carrots, mushrooms, and corn. Once it's all fried up with the chicken, the kids won't know what's what - only that it tastes great!
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2-4 servings
Ingredients
300g chicken tenderloins
100-200g fried tofu
150g spiral pasta
2 tbsp pesto sauce
1 Tbsp Oil
Method
Place a large pot of water on the stove and bring to the boil.
Add the pasta into the boiling water.
Dice the chicken and tofu.
Add oil into a saucepan and fry the chicken until brown. Add in the tofu and fry for another minute, then set aside.
Strain the pasta and place into the saucepan. Return to the heat and fry quickly on high for 30 seconds to crisp the pasta slightly.
Turn off the heat and add in the pesto sauce.
Mix through, top with parmesan, garlic salt, and grated cheese and serve!
