Sometimes I don't want pasta, but I'll have a lot of pasta sauce in the fridge because it makes great sauce for other dishes.
Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 2 servings
Ingredients
1 onion
2 garlic cloves
Half a lemon
Half a tin of onion & garlic pasta sauce
2 chicken breast fillets
Salt
Black pepper
Method
Start by halving and chopping the onion.

Chop the garlic and add both to a frying pan with a splash of olive oil and stir for about 8 minutes. Keep the heat to low until the onions and garlic have softened somewhat.
While they're softening chop the chicken fillets and add to the pan. Turn the heat to medium and season with black pepper and a pinch of salt. Stir every 2 minutes for 10 minutes.
Add the pasta sauce and stir for 2 minutes ensuring the chicken is coated.

Turn the heat down low and add half a cup of water, squeeze the lemon, stir and cover for 15 minutes.
Remove the lid and give it a little stir. Have a taste - the sauce should have done the trick. It should look like this:
Enjoy this left over pasta sauce dish with whatever you like. I've used it to make tasty sandwiches.
