Chicken with Walnuts and Hoi Sin Sauce
This chicken meal tasted delicious with the crunchy texture of walnuts together with the just cooked, tender pieces of chicken breast.
An easy, no fuss recipe!

Serves: 4
Ingredients
About 650 g chicken breast, cut into bite sized pieces
3 tbsp corn flour
3 tsp dry sherry
¾ tsp ginger
3 tbsp Hoi Sin sauce
1½ tsp coconut sugar
2 tbsp dark soy sauce
2 - 3 garlic cloves, crushed
100 g walnut halves, broken
1 tsp sesame oil
Rice
Method
Cook your rice as per packet instructions, and keep warm. I generally do not cook it completely and leave it in the hot water to finish cooking while I make the rest of the meal.
Put the chicken pieces in a bowl and add the cornflour, ginger, and sherry. Mix and leave.
Chicken pieces should be about this size
Mix the Hoi sin sauce, soy sauce, coconut sugar, and about 3 tbsp of water, and stir until it is smooth - leave.
Heat about 2 tbsp oil in a wok and add the garlic. Stir the chicken mixture again, and add to the wok after about 30 seconds.
Stir fry this for about 2 - 3 minutes, or until the chicken pieces are almost cooked - do not overcook, or it will be tough.
Reduce the heat and stir in the Hoisin sauce mixture.
Keep stirring until it is all well mixed, and then add the walnuts and sesame oil. Stir a few times.
Put some rice on each plate and serve the walnut chicken on top of the rice.
