Chickpea Date Blondies

Gorgeous, healthy Blondies filled with honey, cinnamon, dates and tahini. These lil gems are perfect with some Turkish coffee or sweet tea. They smell and taste of the Middle East. The chickpeas add protein, warm colour and a faint nuttiness.

Golden, Aromatic Blondies.


Preparation Time: 5 minutes
Cooking Time: 20-25 minutes
Makes: 10 Squares

Nutritious Ingredients.


Ingredients
240g chickpeas (drained weight)
1 tablespoon of hulled tahini
1 tablespoon of honey
1/2 cup dried dates* (soaked overnight)
1 free range egg
1/2 teaspoon cinnamon
pinch of salt
2 teaspoons vanilla essence
1/2 teaspoon baking powder

Instead of dates you can use choc chips, whole raspberries or any other sweet morsel you love.


Method
  • Drain and rinse the chickpeas and add to a blender with the tahini, honey, egg, cinnamon, salt, dates and water, vanilla essence and baking powder.

  • Ready to Blitz


  • Blend until smooth.

  • I could eat it like this.


  • Pour into a baking paper lined small loaf tin.

  • About 2510cms.


  • Bake at 180 for 20-25 mins

  • Remove when Golden Brown.


  • Cut into squares when warm and serve.

  • This really are so delicious.


  • Keep for over a week but will be eaten before then!

  • These healthy treats are only 76 calories each, a much better option then a store bought Blondie. Don't be put off by the chickpeas they are warm and filling and don't taste savory at all! For another sweet treat using chickpeas try these bars or this slice !
