Chickpea Dhal
With the cooler weather slowly setting in, this warming and nutritious dish hits definitely the spot. The creamy curry sauce gives the chickpeas and carrots a lovely texture and flavour.

Cooking Time: 15 minutes
Makes: 6 servings
Ingredients
1 tablespoon oil, to fry
2 x 400g cans of chickpeas, rinsed and drained
3 carrots, sliced halve ways and chopped thinly
75ml coconut milk
1 brown onion, finely chopped
2 cloves garlic
1 teaspoon ginger
2 tablespoons curry paste (red preferred)
bunch chopped coriander
rice, jacket potatoes or naan bread, to serve
Method
Heat oil in a medium pot and fry the chopped onion and garlic until tender and starting to brown.
Add the ginger and curry paste and cook for 1 minute.
Mix the carrots through and allow to soften slightly.
Add the chickpeas and coconut milk and cook for about 5 minutes. Should only ever be at a simmer.
Once the mixture has began to thicken, season to taste and turn off heat.
Fold through the coriander and serve with rice, jacket potatoes or naan bread.
