Chickpea Patties

Healthy protein patties, for immunity and great taste! They would be nice for a hot breakfast. If using dry chickpeas, soak them overnight.



Preparation Time: 30 minutes
Cooking Time: 45 minutes
Serves: 4



Ingredients
1 brown onion
1 clove garlic
1 small tomato
1 egg
1/4 cup wholemeal flour
1/2 teaspoon sweet paprika
1/2 teaspoon curry powder
1 cup soaked chickpeas
1 tablespoon of olive oil



Method
  • Boil chickpeas on the stove top for 35 minutes
  • Cut up onion, garlic and tomato in to fine pieces
  • Blend chickpeas and olive oil
  • Mix flour, egg, garlic, onion and tomato in a bowl with curry powder and chickpeas
  • Place baking paper on a baking tray and mold mixture into cookie shapes (or any shape you like)
  • Bake for 45 minutes or until golden brown
