A combination of bitter and sweet vegetables balance each other out in this nutritious soup.

Ingredients
600g sweet potato
1 large onion
2 heads of chicory (radicchio)
2 tsp paprika
2 tsp mixed herbs
Since of black pepper
1L vegetable stock
Method
Pre-heat oven to 200 ༠C/ 180 ༠C fan/350༠F/6 Gas.
Chop the sweet potato, onion, and chicory, and cook in the oven for 25 minutes.
Mix these vegetables together and divide into two batches.
Place the first batch in a blender with 500 ml vegetable stock, and blitz to a thick liquid.
Repeat wit the second batch, and then stir the two batches back together.
Stir in the herbs and spices.
