Chili Chicken and Noodle Patties with a Lime Sauce
These were a different slant on a chicken pattie and include crushed rice noodles.
They can be made to whatever size you want and I made them rather large as originally I was going to have them in a hamburger.
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: About 8 large patties
Ingredients
50 g dried rice noodles
900 g chicken mince
2 tsp lemongrass, finely chopped
2 tsp red chili, finely chopped
1 tsp lime zest, grated
2 tbsp coriander, chopped
Bit of plain flour
2 tbsp olive oil
For the lime sauce
80 ml lime juice
2 tbsp fish sauce
2 tbsp brown sugar
ΒΌ cup dry white wine
80 ml sweet chili sauce
Method
Crush the rice noodles - I did this by putting them in a plastic bag and beating them with a meat cleaver.
Put the noodles in a bowl and pour boiling water over them. Let stand until they are done and then drain.
Mix the noodles with the chicken mince, lemongrass, lime zest, chili and half the coriander.
Shape the patties to the size you want and toss them in flour. Shake off the excess flour.
Heat the oil in a large frypan, and cook the patties until they are browned on both sides and just cooked through. As I always say with chicken white meat, do not overcook or they become dry.
For the lime sauce
While the patties are cooking, make the lime sauce by putting all the sauce ingredients in a Tupperware or similar with a lid.
Shake to mix it thoroughly and serve with the chicken patties.
Can also be eaten at room temperature, and patties can be frozen.
I served it with a couscous and haloumi salad (recipe follows).
