Chilled Tomato Pear Low Calorie Soup

This is an excellent recipe if you're on a diet like the 5/2 diet, as there are less than 100 calories per serve.

It can also be served hot but at this time of year, is far nicer chilled.

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
1 onion, chopped finely
400g tin Tomatoes
1/4 tsp dried mixed herbs
1 tsp dried tarragon (I did not use this)
410g tin Pears in natural juice
600 ml vegetable stock -made with stock cube
juice of 1 lemon
salt & black pepper



Method

  • Add a bit of oil or preferably spray a non-stick saucepan with low fat spray, and cook the onion until soft.



  • Add the rest of the ingredients.



  • Stir.



  • Cover and simmer gently for 20 minutes.



  • Liquidise to a smooth consistency.

  • Check the seasoning and if necessary, gently reheat.



  • If serving cold, chill first, and add parsley sprigs on the top (optional).

    It has a very unusual but delicious taste--see if any of your friends can guess the ingredients.

    This recipe can be frozen.
