Chilli Thyme Pumpkin Seeds

Pumpkin seeds are the protein rich little insides from the seasonal favourite, pumpkin. Turn these rather plain nibbles into something spectacular with a chilli kick and herby seasoning with the following recipe.



Preparation Time: 2 minutes
Cooking Time: 15 minutes
Makes: 100g

Ingredients
5 tblsp pumpkin seeds
Sprig of thyme
1/2 tsp black pepper
1/2 tsp chilli powder
1 tbslp olive oil

Method
  • Give the seeds a thorough rinse, once scraping them from the pumpkin.



  • Place on a baking tray lined with greaseproof paper, and season with the herbs and spices.



  • Don’t worry if you’re a little heavy handed with the seasoning because the seeds do not absorb the flavours as much as a piece of meat would.

  • Drizzle with the oil and place in the oven for 15 minutes at 150 degrees/gas mark 3.



  • Remove from the oven and allow to cool.



  • These roasted pumpkin seeds are a more luxurious take on the standard seeds which can seem a little boring when plain.



    Store in an airtight contain to keep fresh.
