Chilli Basil and Lemon Broccoli Pasta
If you are after a quick and healthy lunch that is on the table in twenty minutes, then this is the pasta for you. It is full of flavour from the bright shards of lemon zest, spicy chilli and torn basil leaves. This can be dressed up with a little olive oil and parmesan if you desire or enjoyed plain and simple - the way pasta was intended!
Served with wholemeal pasta and extra crunchy almonds.
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 servings
Ingredients
1 large head broccoli
1/2 tablespoon olive oil
1 long red chilli
2 cloves garlic
1/4 cup almonds
2 spring onions or brown onions
Large handful of basil leaves
Zest of 1 lemon
Salt and Pepper to taste
Grated Parmesan cheese, pasta and oil to serve.
Method
Bring a large pot of salted water to the boil and cook your pasta.
Meanwhile heat the olive oil over a medium heat. Saute the chilli, garlic and onion until softened then throw in the broccoli florets.
Once the broccoli is bright green but still firm add the torn basil leaves, lemon zest, and salt and pepper to taste.
Throw in the cooked and drained pasta and toss it all together.
Finally add the crunchy nuts and serve hot.
