Chilli Chicken Stir Fry With Pumpkin and Brocolli
Stir frys are quick and easy to prepare, extremely filling and usually are very healthy. This is a recipe my family loves and we adjust the amount of chilli to suit which family members are eating it.
Preparation Time: 15 minutes
Cooking Time: 10 minutes
Serves: 4
Ingredients
2-4 chilli's (optional)
400 g chicken, sliced thinly
400 g pumpkin, sliced thinly
1 small head of brocolli, cut into florets
1 carrot, peeled and sliced
1 red capsicum, deseeded and sliced thinly
5 tbs oyster sauce
soy sauce, to taste
fish sauce, to taste
1 tbs oil, to fry
boiled rice, to serve
Method
Heat the oil in your wok or frying pan to a high heat and fry the chilli for 30 seconds.
Add the chicken to the wok/pan and stir fry for 1 minute before adding the carrots, pumpkin and brocolli to the wok/pan. Stir fry for approx 5 minutes until the chicken has cooked through and the vegetables have softened slightly but still have some crispness to them.
Stir through the capsicum, oyster, soy and fish sauces.
Serve immediately with boiled rice.
If you are using a frying pan you may not have room for all the ingredients to fry at once. I suggest you fry the chicken and remove it from the pan before frying the vegetables. Add the chicken back to the pan when you are adding in the sauces and capsicum.
