Chilli Con Carne
Chilli con carne is a great meal and very versatile. You can eat a bowl of chilli con carne as is, or add corn chips and sour cream for delicious nachos. Turn any leftovers into burritos.
Preparation Time: 5 minutes
Cooking Time: 40 minutes
Serves: 4-6
Ingredients
1 tbs oil
1 onion, diced
2 cloves garlic, crushed
1-3 chillis, diced
250 g mince
1 x 400 g can lentils, drained (or substitute with 250g mince)
1 tbs cumin
1 tbs paprika
2 tbs tomato paste
2 x 400 g cans crushed tomatoes
2 x 400 g cans red kidney beans
Method
Heat oil in a frying pan to a medium high heat. Fry the onions, garlic and chilli for 5 minutes or until the onions have softened.
Add the mince and lentils to the pan and fry for 5 minutes until the mince has browned.
Add the cumin, paprika and tomato paste and fry for an extra 2 minutes.
Add the crushed tomatoes to the pan, stir to combine. Allow the mixture to simmer for 30 mins.
Add the kidney beans to the pan and stir to combine.
Once the kidney beans are heated through your meal is ready to serve.
