Chilli Con Carne

Chilli con carne is a great meal and very versatile. You can eat a bowl of chilli con carne as is, or add corn chips and sour cream for delicious nachos. Turn any leftovers into burritos.

Preparation Time: 5 minutes
Cooking Time: 40 minutes
Serves: 4-6

Ingredients
1 tbs oil
1 onion, diced
2 cloves garlic, crushed
1-3 chillis, diced
250 g mince
1 x 400 g can lentils, drained (or substitute with 250g mince)
1 tbs cumin
1 tbs paprika
2 tbs tomato paste
2 x 400 g cans crushed tomatoes
2 x 400 g cans red kidney beans

Method
  • Heat oil in a frying pan to a medium high heat. Fry the onions, garlic and chilli for 5 minutes or until the onions have softened.
  • Add the mince and lentils to the pan and fry for 5 minutes until the mince has browned.

  • Add the cumin, paprika and tomato paste and fry for an extra 2 minutes.
  • Add the crushed tomatoes to the pan, stir to combine. Allow the mixture to simmer for 30 mins.

  • Add the kidney beans to the pan and stir to combine.

  • Once the kidney beans are heated through your meal is ready to serve.
