Chilli Garlic Prawn Pasta

Garlic prawns is a classic dish loved by all prawn eating Australians. I have swapped the crusty bread for fettucini and added some fresh chilli for a nice bite but of course this sauce can be eaten traditionally.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
100g dried pasta
1/4 cup butter
2 garlic cloves - crushed
1 fresh chilli
1/2 teaspoon sea salt
300g prawns (peeled weight)
1/4 cup fresh lemon juice
1/4 cup finely chopped fresh flat-leaf parsley



Method
  • Boil a pot of water and put your pasta on to cook.

  • Meanwhile, melt butter in a large pan over a medium-high heat. Once bubbling add the minced garlic and diced chilli.


  • Cook for 1 to 2 minutes or until fragrant. Add the raw prawns and cook turning the prawns for 3 to 4 minutes or until the prawns turn pink and are almost cooked.


  • Add the lemon juice and chopped parsley to the pan.

  • Drain the cooked pasta and toss it in the pan, mix until the pasta is coated and the prawns are cooked through.



  • Split into two bowls and garnish with more parsley leaves and a sprinkling of good salt.
